Clean Chicken Pad Thai

I love Pad Thai, but most versions have a lot of sodium and peanuts, which just aren’t a part of my diet anymore. So, I started experimenting with some different ingredients and finally found a combination I love and really gives you the taste you are looking for but is so much healthier for you!
Makes 3-4 Servings
Ingredients –
2 large Chicken Breast (or 3 smaller ones)
2 teaspoons Trader Joe’s Seasoning Salt
1 tablespoon Ghee (I love this one 4th & Heart Ghee)
4 cups Kohlrabi Noodles*
1 cup Shredded Kale
½ cup Shredded Carrots
1 teaspoon Pink Himalayan Salt (this is the salt I use)
3 tablespoons canned Coconut Milk
3 tablespoons clean Chicken Broth
2 teaspoons Coconut Aminos (or Brags Liquid Aminos)
1 teaspoon clean Almond Butter (or any nut better you love)
1 teaspoon Garlic Salt
Salt and Pepper to taste
Recipe –
Preheat the oven to 325. Prepare a baking sheet for your chicken. I like to use a silicone baking mat, but you can use tin foil, parchment paper, or even just a little oil to keep your chicken from sticking to the pan. Place chicken breast on baking sheet and sprinkle them with seasoning salt (or your favorite seasoning). Put into preheated oven and bake for 18-20 minutes (may need longer depending on the thickness of your chicken).
In a large sauté pan on medium heat, add in the ghee. Once ghee has melted, mix in kohlrabi noodles, kale, carrots and then sprinkle with salt. Sauté, stirring regularly until noodles become soften and become translucent and kale and carrots soften, about 10 minutes.
While the noodles are sautéing, make your sauce. In a small bowl add coconut milk, coconut aminos, almond butter, and garlic salt. Mix well with small whisk or fork until all ingredients blended.
Once noodles mixture is softened, add in sauce mixture and combine thoroughly. Let cook on medium low for another 3-5 minutes so the flavors can combine. Take off heat and salt and pepper to taste.
At this point, you can either chop up the chicken into bite-size pieces and mix in the noodles for a traditional Pad Thai look, or you can just plate noodles first and top with sliced chicken breasts.
Then enjoy!!!
*I have a hard time finding kohlrabi noodles by themselves in my area, but I can usually buy a packaged Kohlrabi mix and I just throw out everything but the veggies (I use 2 containers of Mann’s Nourish Bowls, Spicy Thai). This also makes it really easy, because it already includes the kale and carrots!
